Vietnam set to compete at Bocuse d’Or Grand Finale for the first time

For the first time in history, Vietnam is set to compete on the world’s biggest culinary stage—the Bocuse d’Or Grand Finale in Lyon, France, in January 2025.

This monumental occasion was celebrated with a spectacular Gala Dinner at Café Cardinal, The Reverie Saigon, where Vietnam’s finest chefs and gastronomic enthusiasts united to support Team Vietnam’s journey. The dinner also served as a fundraising initiative to propel Vietnam’s debut at this prestigious global culinary competition.

Vietnam is one of the five representatives from the Asia-Pacific region to advance to the finals of this prestigious global culinary, which affirms the country's position on the world culinary map. In the upcoming contest, the Vietnamese team will be accompanied by two coaches, chef Sakal Phoeung, President of the Bocuse d'Or Vietnam Association, and chef Daniel Nguyen.

The Bocuse d’Or: the 'Olypimcs of Gastronomy’

Dubbed the “Olympics of Gastronomy,” the Bocuse d’Or is an elite culinary competition founded by legendary French chef Paul Bocuse in 1987. Held biennially in Lyon, it gathers the most talented chefs from around the world to showcase their artistry, precision, and technical skills.

Competing chefs must present elaborate, visually stunning, and flavour-forward dishes to a panel of renowned judges, pushing the boundaries of culinary innovation. Vietnam’s participation marks a new chapter in its burgeoning gastronomic scene, spotlighting the nation on the global culinary map.

Meet Vietnam’s first-ever team to compete

This January, Vietnam will make its debut, led by Chef Vu Xuan Truong of P’ti Saigon, supported by his commis, Nguyễn Quang Tâm from Quince Saigon. Together, they will present a dish that encapsulates Vietnam’s rich culinary heritage and innovative vision.

Chef Vu Xuan Truong, a rising star in Vietnam’s culinary scene, brings a wealth of experience and a deep passion for showcasing Vietnamese flavours with a modern twist. His creativity and technical mastery have earned him recognition as one of the country’s most promising chefs.

Taking on the role of commis is Nguyễn Quang Tâm, currently part of the culinary team at Quince Saigon. A young and highly promising talent, Tâm is known for his exceptional dedication and passion for the culinary arts. With his accumulated experience and innovative approach, he is fully prepared to embrace this challenge—the greatest of his career—while striving to elevate Vietnam to new heights on the world stage.

Chef Vu Xuan Truong shared his thoughts on this historic milestone: “It’s a victory for Vietnamese cuisine and the heritage we proudly represent. Competing in Lyon is both an honour and a formidable challenge. We carry the pride of our nation and invite everyone to support us as we showcase our culinary excellence on the world stage.”

A gala dinner to fundraise and unveil team Vietnam’s Bocuse d’Or tray

The gala dinner was a feast for the senses, featuring a five-course menu crafted by some of Vietnam’s most celebrated culinary talents. Chef Peter Cuong Franklin of Anan Saigon, Michelin-starred for his inventive Vietnamese cuisine, opened the evening with his signature creativity.

Chef Julien Perraudin of Quince Saigon brought Mediterranean-inspired elegance, while legendary chef Didier Corlou of Madame Hien showcased his mastery of fusing Vietnamese and global flavors. Michelin-starred Chef Sam Aisbett wowed guests with bold and refined creations, and Chef Hoàng Tùng ended the night on a high note with stunningly inventive desserts.

A highlight of the evening was the unveiling of Team Vietnam’s competition tray. Featuring dishes like Salmon Chaud Froid, Ratatouille, and Celeriac Daikon Rosette, this intricate presentation offered guests an exclusive look at the artistry and precision Vietnam will bring to Lyon. The tray’s preparation was enhanced by the Velacucina Invisible Induction Solution, a testament to the innovative spirit driving Vietnam’s culinary scene.
